How to Deep Fry a Turkey

The first thing you must insist on, is safety. I cannot stress that enough.
Deep frying a turkey is fun, tasty, but dangerous. You must not do this on your
deck or near your house. The Oil (Peanut) will over flow and hit the open flame
of the fryer so be very careful.
You will notice that the turkey is dry before placing it into the fryer. It must
be good an dry as water and oil DON’T mix. When prepping, put the bird in the
pot (as directed by the instructions that came with your fryer) then add water
to cover the bird plus one inch. This will allow you to determine the
displacement of liquid volume before putting in the oil for pre-heating. This
step is the one which most people skip. They fill the pot with oil, heat it to
350 degrees and then put in the turkey - well guess what - it over flows as the
turkey displaces about half the oil and that is how a tragedy starts.
So - please find out how much your bird will displace with water first. Get a
sharpie pen and mark the high water line inside the pot. Take the bird out, let
it get good an dry and dry out the pot with vigor. Add your fresh peanut oil to
the line and follow the directions for your fryer to getting the oil to the
correct temperature to cook the bird. The oil will not boil - not until you put
the bird in it. You will see in the video the reaction of the oil when the bird
is introduced into it. Now in about 50 to 60 minutes the turkey will be done.
